Assorted Fresh MushroomsWe use a range of fresh mushrooms including Cremini, Portobello, Button, Shiitake, and Oyster to create a complex range of earthy flavors.

Assorted Dried MushroomsOur dried mushrooms are the umami powerhouse of this sauce. When a mushroom is dried, their guanylate content increases, while the drying process enhances glutamate boosting their umami flavor. Dried mushrooms are earthier and stronger than fresh mushrooms and are the backbone of the Mushroom XO Sauce.

OnionsOnions provide sweetness to balance the acidity of our Mushroom XO sauce. Slowly cooking onions accentuates its umami characteristics. We slowly caramelize and roast our onions in order to bring out its rich sweet flavor.

Organic Distilled VinegarOrganic distilled vinegar adds acidity without overpowering the flavors of our mushrooms. It is the perfect addition to get your mouth salivating.

Organic Evaporated Cane SugarOrganic Evaporated Cane Sugar adds sweetness to our Mushroom XO sauce in order to balance the acidity of the vinegar and umami from the fresh and dried mushrooms.
